Chocolate Dream Cake with Whipped Chocolate Ganache
Ingredients:
For the cake: 1 dark chocolate cake mix as much eggs, oil and water as the chocolate cake mix calls for 1 box of chocolate pudding, small box 5.9 oz 1-2 tablespoons of Crisco For the whipped chocolate ganache: 1 bag of milk chocolate or semi sweet chocolate chips 1/2 stick of butter ( I used salted ) 2-3 table spoons of heavy cream ( regular milk will work ) |
Preheat you oven to 350*. Make the chocolate cake as it says on the box, when its all mixed together mix in the chocolate pudding until fully incorporated. Grease your two round cake pans generously with crisco before pouring your batter in. I use two 6-8 in deep round cake pans. Bake until when you insert your knife there's only a little batter left on your knife, then take it out. You don't want to fully cook it or it will be dry. It will continue to cook while its out of the oven. Let it cool for about 10 mins and then pop them out and put them on cooling racks.
While your cake is baking, fill a pot with 2-3 inches of water and put in on to boil. You want it to come to a roaring boil and then a simmer.
You'll need a metal or glass bowl that will fit on top of your pot with out falling into it and that can withstand heat with out breaking. Fill that bowl with your bag of chocolate chips. Then cube your butter into small chunks and add them to your chocolate chips. When your waters at a simmer put your glass or metal bowl on top of your pot. Fold until your chocolate starts to melt. Pull your bowl off the pot and continue to fold until your chocolate and butter is completely melted together. You might have to put it back over the pot once more, but do not leave it on it until its completely melted because the bowl will be hot when you take it off the heat and will burn your chocolate! When its completely melted together add a couple tablespoons of heavy cream and fold together. It will become thin like a glaze or a syrup. You can pour it on your cake if you want to use it just as a glaze, but this recipe calls for whipped ganache. |
Take your bowl of ganache and cool it in the fridge for 45 mins to an hour. ( I was in a hurry and I put mine in the freezer until chilled ) Once its cooled, mix with your mixers whisk attachments on medium speed until it becomes moose like, continue beating until it forms medium-stiff peaks. It will take about 2-5 mins.
Frost the top of the bottom layer of cake with a layer of ganache, add the top layer and frost the whole cake generously with your whipped chocolate ganache. You can serve immediately and enjoy!
